Diabetics often prefer xylitol as a sweetener.  This almost sugar free carrot cake; unfrosted with just 1.5g of natural sugar per 100g (thank you Sweet Carrots!). Sweetened with xylitol which is low in calories. NOT FOR babies/pets; excess xylitol may cause a laxative effect.
